On February 22, chef Clémence Gommy, Founder & Creative Culinary Director of @gomiparis, joins 1OAM apotheke for a culinary residency dedicated to olive oil—the cornerstone of Mediterranean cuisine. Known for her immersive food experiences, Clémence crafts dishes that honor tradition while embracing bold, unexpected pairings.

Working alongside her longtime collaborator Léna-Blue Dupuy, the duo brings their signature approach to pop-ups, seamlessly managing both the setup and the culinary experience.

From 11 AM until sold out, the dining table becomes a living installation, an ode to olive oil’s depth, texture, and ability to elevate the simplest of ingredients. This seasonal setting offers an immersive experience honoring its central role in Mediterranean culture. Each dish is crafted with 1OAM apotheke’s extra virgin olive oil, enhanced by 1OAM apotheke’s fleur de sel, organic honey, and hand-selected herbs, weaving together flavors that embody the region’s essence.

Menu:
– Roasted cauliflower pita with olive oil, citrus, graviera, and Greek yoghurt sauce with bergamot and thyme honey
– Crispy fried artichokes with whipped feta cream
– Baked chocolate mousse drizzled with olive oil and sea salt
– Olive oil cake with citrus confit and thyme honey
