On April 5 & 6, Despina Bitzaraki, born and raised in Crete, baker and farm chef of @therooster.antiparos, takes over 1OAM apotheke’s kitchen for a two-day culinary residency dedicated to the craft of bread and pies. Rooted in Cretan tradition, her baking carries the essence of the island—simple, bold flavors shaped by time, memory, and the land itself. From 11 in the morning until sold out, the space will be filled with the crackle of golden crusts, the warmth of slow-fermented dough, and the rich, earthy aroma of freshly baked pies.
